One of the secrets of Don Melchor lies underfoot in the stony soil that comprises material carried down from the Andes by the Maipo River. The soil is poor in nutrients but diverse in its structure. Clay, lime, sand, gravel, and other stones lend Don Melchor its unique character, one that has been clearly been demonstrated over the years.
Another important factor of this extraordinary terroir is the cold influence of the Andes Mountains in the form of cool breezes and a broad oscillation between daytime and nighttime temperatures during the ripening period. These conditions encourage the tannins to ripen slowly and evenly while conserving just the right amount of acidity, fresh red fruit characteristics, and highly concentrated color and aromas in the grapes.”
